The standard

Quality is not a department at JJ Seafoods; it is the operating system. These six pillars govern how every catch is received, processed, frozen, tested, documented and shipped.

HACCP-based food safety
A documented HACCP plan covers every critical control point, from receiving to sealing the reefer container.
Uninterrupted cold chain
Blast-freezing to –40°C and holding at –22°C, with continuous monitoring across storage, loading and transit.
In-house laboratory
Microbiological, chemical and organoleptic testing on every batch — the results are the reason we ship or we don't.
Full traceability
Every carton links back to catch date, vessel or farm lot, processing line and operator — verifiable on request.
Third-party audits
Regular audits from buyer QA teams and independent bodies. We prefer being tested.
Complete documentation
Health certificates, catch certificates, phyto and commercial documents prepared before your vessel sails.
Process checks

Receiving inspection
Temperature, freshness, size grade, damage and origin verified before any consignment is accepted.

Pre-process grading
Trained graders sort by size and quality; anything outside specification is rejected.

Process line checks
QA officers monitor time, temperature, chlorine levels and yield at each station on the line.

Freezing & metal detection
Product moves through calibrated freezers and metal detectors — every carton, every time.

Laboratory release
Batches are only released after in-house lab clearance. Retention samples are held for every lot.

Container loading
Reefer pre-cooled, temperature verified and sealed under QA supervision with photo documentation.
Testing
Independently verifiable — not just claimed.
Our in-house laboratory tests for microbiology (Total Plate Count, Coliform, E. coli, Salmonella, Vibrio, Listeria), chemistry (moisture, pH, antibiotic residues, heavy metals) and sensory parameters on every lot.
Retention samples are archived for the shelf life of each shipment. Third-party analyses from accredited external laboratories are conducted at defined intervals and are available to buyers as part of standard export documentation.
